
This recipe is great on the grill or can be prepared in the traditional way in the oven.
(If using the oven method, Preheat oven to 350 degrees F.)
1. Preheat the grill to medium heat
2. Mix together the beef, bread crumbs, onion, egg, salt, pepper, and 1/2 cup of the tomato sauce.
3. Form this mixture into a loaf and place it in a shallow pan. (For grilling, be certain to use a pan you don't mind getting discolored from the grill smoke and heat. A disposable aluminum bread pan works great)
4. Stir together the remaining tomato sauce, vinegar, sugar, mustard, Worcestershire and the water (if too thick).
5. Pour 3/4 of this sauce over the meatloaf.
6. Bake in a covered grill until the internal temperature is 170 degrees F, approx 40-60 min depending on grill heat.
7. IF GRILLING: mix the remaining 1/4 of the sauce with 2 Tbls olive oil and stir until smooth. Quickly baste a little of this sauce mixture over the meatloaf every 10-15 min while grilling and return the cover of the grill quickly.
7. (For the traditional oven method, bake for 1 hour, basting every 15 minutes with the pan juices in place of sauce and oil)
This is great the next day as a sandwich with mayonnaise spread on both slices of bread and a nice slice of meatloaf in between!
