
1. In a large stock pot or Dutch oven add the olive oil and beef over high heat
2. Brown meat well
3. Add the onions and stir until they are beginning to brown
4. Reduce the heat to low
5. Add the carrots, celery, tomatoes, and beef broth
6. Simmer uncovered for 45 min
7. Stir in mushrooms and barley and if needed, add water
8. Simmer an additional 45 min, stirring occasionally and adding additional water as needed or desired to keep broth level up
9. Taste and adjust the seasoning with salt and pepper as needed.
