Displace that trendy avocado toast with this tasty alternative.

Cheesy Cauliflower Toast

Yields4 Servings
Prep Time10 mins

 1 Cauliflower head, chopped to bite size pieces
 1 Shallot, minced
 Juice of 1/2 lemon
 Olive oil
 salt
 4 Sourdough bread slices, thick
 1 cup Fontina cheese, shredded
 ¼ cup Parsley, finely chopped

1. Heat about 2 tbsp. olive oil in a large skillet over medium heat.
2. Add the cauliflower and season with salt and pepper to taste.
3. Let the cauliflower pieces sit for a minute or so in the pan without stirring.
4. When the cauliflower begins to brown, stir with a wooden spoon.
5. Cook until the cauliflower is golden, stirring occasionally.
6. When the cauliflower is tender, add the lemon juice and stir to combine.
7. Remove pan from heat.
8. Preheat broiler.
9. Brush sourdough slices with olive oil.
10. Toast under broiler until golden-brown.
11. Divide cauliflower between bread.
12. Top each slice with a handful of fontina and sprinkle with parsley.
13. Broil until the cheese is melted and beginning to brown, about 1-2 minutes.

This recipe can also be completed on a hot grill in place of the broiler to toast the bread and melt the cheese for a wonderfully smokey flavored bread!

Serve immediately.
