 1 tbsp Lemon Juice
 1 tbsp Honey
 1 tbsp Ginger, grated (may substitute 1 tsp dry ginger powder if needed)
 ¼ cup Olive Oil
 3 cups Grilled Chicken, diced or shredded (personal preference)
 1 cup Mango, diced
 Cherry Tomatoes, halved
 Assorted young greens as desired (arugula, endive, leafy lettuce, etc)
 1 Cucumber, sliced and halved

1. Whisk together lemon juice and honey, ginger and olive oil until combined and smooth
2. Add grilled chicken, mango, cucumber, and tomatoes and toss till combined
3. Serve over small leafy greens as desired.
