Side Dish: Crispy Cauliflower Fritters

 1 Cauliflower Florets 10 oz Pkg (steam in the bag) or Large Fresh Cauliflower floret if desired
 1 cup Shredded Hash browns (or fresh shredded potatoes if desired)
 1 Onion, medium, chopped
 2 tbsp Flour
 2 Garlic cloves, minced
 1 tsp Salt
 ½ tsp Ground pepper
 ½ cup Cheddar Cheese, shredded
 1 Egg
 2 tbsp Olive oil
Sauce
 ¼ cup Greek yogurt, plain
 2 tbsp mayonnaise
 2 tsp lemon juice
 2 tsp fresh chives

1. Prepare cauliflower according to package directions. For fresh cauliflower; chop, then boil or microwave until tender
2. In a bowl mash cauliflower (or pulse in a food processor)
3. Mix in onion, flour, garlic, salt, pepper, hash browns, cheese, and egg.
4. Heat a large skillet over medium-high heat.
5. Add 1 Tbls oil, swirl to coat.
6. Scoop 1/4 cup of mixture into the pan.
7. Press down gently to flatten.
8. Cook for 4 minutes, flip and cook for an additional 4 minutes. Remove from pan, and repeat with the remaining ingredients.

9. In a small bowl combine all of the ingredients for the sauce.

Serve sauce with hot fritters.
