English Muffin Bread

 1 cup milk (or water if milk in not available)
 ½ cup water
 1 packet active dry yeast
 5 ½ tsp sugar
 1 tsp salt
 1 tsp baking powder
 2 ½ cups all purpose flour (may substitute up to 1 cup of whole wheat flour)
 Cooking Spray
 Cornmeal for dusting

1. Warm the milk and the water to approx 110 F to ensure the yeast will become active
2. In a large bowl combine the yeast, sugar, salt, baking powder, and about half the flour
3. Add the warm milk and water and stir until thoroughly mixed
4. Add the remaining flour and stir it in. Make a point NOT to knead the dough
5. Coat your baking pan with cooking spray
6. Sprinkle the pan with a light dusting of corn meal
7. Transfer the dough to the prepared pan and cover with a towel
8. Leave the dough in a warm location and let rise to double in size (should take approx 1 hr in a warm (75F) location
9. After dough is doubled in size, preheat oven to 375F
10. Place dough in over and bake for approx 35 minutes, or until crust is golden brown
11. Remove from pan and let cook for a few minutes prior to serving, but serve warm or toasted
