
½ cup mayonnaise
1 can (6 oz)Pineapple chunks, drained; juice reserved
4 cups shredded cabbage
¼ cup dry roasted peanuts
baby carrots, sliced
2 tbsp rice vinegar

1. Place the mayonnaise in a medium bowl, stir in the rice vinegar.
2. Add just enough of the reserved pineapple juice and mix to get the consistency of runny ketchup (discard the rest of the juice)
3. Add the shredded cabbage, carrots, and toss well.
4. Add peanuts and toss to combine.
