
1. Slice the zucchini in half length-wise and scoop out the flesh to a bowl
2. In a skillet, heat olive oil over medium heat
3. Add onion, potatoes, bell pepper and saute for 5 minutes
4. Dump this mixture into the bowl with the zucchini flesh
5. Stir in Thyme, oregano, garlic, salt, and pepper
6. Fill zucchini halves with mixture
7. Wrap in aluminium foil and place directly onto a medium-hot grill for 15-20 minutes
Serve hot. May sprinkle top with shredded Parmesan and/or mozzarella cheese prior to grilling based on dietary preferences and taste.
