Healthy Breakfast Bars

 2 cups Oats, old fashioned
 1 cup Flour, whole wheat
 2 tsp Cinnamon
 1 tsp Baking powder
 ½ tsp Kosher salt
 1 ½ cups Milk (Vanilla Almond Milk also works great)
 4 tbsp Honey
 2 tbsp Peanut Butter (creamy or cruchy)
 ½ cup Applesauce, unsweetened
 1 Egg, large
 1 tsp vanilla extract
 1 Bananana, quartered and diced

1. Preheat oven to 375 degrees F.
2. Lightly coat an 8x8 inch square pan with cooking spray.
3. In a medium bowl, stir together the oats, whole wheat flour, cinnamon, baking powder, and salt.
4. In a separate large bowl, combine the milk, applesauce, egg, honey, peanut butter, and vanilla.
5. Pour the dry ingredients into the wet mixture and stir to combine. The batter will be very wet.
6. Fold in the diced banana, then pour into the prepared baking pan.

Bake for 35 minutes or until thickened and golden and a toothpick inserted in the center comes out clean. Cool, cut into bars, and serve.
