Grilled Chesapeke Bay Pork Chops

 4 Pork Loin Chops
For The Brine
 4 tbsp Sea Salt
 4 cups Water
 1 tbsp Old Bay Seasoning
For the BBQ Coating
 4 tbsp Old Bay Seasoning
 3 tbsp BBQ sauce of your choice
 2 tbsp olive oil or vegetable oil

Brine the Pork Chops for 1/2 hour to 2 hrs depending on how much time you can work with best. The longer the better to a point.
To brine the pork chops:
1. Mix together the brine ingredients in a mixing bowl
2. Place the pork chops in a gallon size zip-lock bag and poor the brine over the chops. Seal and let sit in the refrigerator as directed above.
MIX THE SAUCE
1. Mix together all of the BBQ Ingredients while the chops are soaking in the brine and set aside
To Grill The Chops
1. Preheat your grill to medium heat
2. Remove the pork chops from the brine and place onto the heated grill.
3. Lightly brush the top of the chop with the BBQ sauce mixture and grill covered for approx 5 min
4. Flip the chops over and brush the top side with BBQ sauce mixture, cover and continue to grill approx 5 more minutes.
5. Remove the chops from the grill and check to ensure done with no pink in the center or use a meat thermometer which should read at least. 145 degrees F (63 C)
6. Lightly sprinkle a very small amount of additional Old Bay Seasoning on the top of the chops prior to serving if desired.
