 1 Onion, medium to large
 4 cups Sweet Potatoes, chopped
 1 Cauliflower Head, large, (about 5 cups chopped)
 2 tbsp Olive Oil
 1 tsp Kosher salt
 2 tbsp Curry Powder
 1 tbsp Garam Masala spice mix
 1 tsp cumin powder
 ¼ tsp cayenne powder
 1 Can (28 oz) Diced tomatoes
 1 Can (15 oz) Coconut Milk (Full-fat works and tastes best!)
 1 Can (15 oz) Chickpeas (Garbanzo beans)
 4 cups Spinach leaves
 Brown Rice for serving (4 cups cooked)

1. Dice the onion.
2. Chop the sweet potato into bite-sized chunks (do not peel).
3. Chop the cauliflower into florets.
4. Heat 2 tablespoons olive oil in a large nonstick skillet over medium-high heat.
5. Add onion and saute 2 minutes, then add the sweet potato and saute 3 minutes.
6. Add cauliflower and ½ teaspoon kosher salt and saute another 5 minutes.
7. Stir in 2 tablespoons curry powder, 1 tablespoon garam masala, 1 teaspoon cumin, and ¼ teaspoon cayenne.
8. Add the Muir Glen tomatoes and coconut milk.
9. Bring to a boil, then cover, reduce heat and simmer for about 10 minutes until the cauliflower and sweet potato are tender.
10. Drain and rinse the chickpeas.
11. When the vegetables are tender, add the chickpeas and 4 cups spinach and stir for 2 minutes until the spinach is wilted.
12. Add another ½ teaspoon kosher salt to taste, adding additional salt if necessary.

Garnish with chopped cilantro, and serve with brown rice.
